top of the food chain: stolen marinara sauce
Stolen from a restaurant in San Francisco called The Stinking Rose. “Stinking rose” refers, of course, to garlic; which is featured prominently in all of their recipies (including ice cream). This simple sauce is a sure-fire winner.
You’ll need a large pot, and the following:
- 1 46 oz. jar of tomato juice
- 1 small can of tomato paste
- 8 large garlic cloves, minced
- 1 bunch of Italian flat-leaf parsley
- 1 tsp. of crushed red pepper flakes
- 2 tsp. of anise seeds
- 1/3 cup of olive oil
- Chopped onion or onion powder to taste
You could use canned tomatoes instead of the approach I took, but I don’t like slimy things in my food. I used onion powder as a time-saver. Cut as much of the stems off the parsley as you care to — I got the main stems plus some of the thicker parts; I didn’t bother with the rest — and chop it along with the garlic (and onion). Heat the oil in your pot, and add the parsley, garlic, pepper flakes, and onion all at once, sauteing for 4-5 minutes (less if you didn’t use the onion). Add the tomato products. Bring all to a boil, and then simmer for two hours.
This sauce keeps in the fridge for several days and in the freezer indefinitely. It could be served on almost anything Italian in nature, including as a pizza sauce. I keep some around for when I don’t feel like cooking.

I love the stinking rose. I know it is touristy, but the heated garlic appetizer is just incredible…it will make you stink for a day, but man is it worth it!

Ten tablespoons is 5/8 cup. At that rate, if you make this much, you’ll have sauce around for about two weeks (if you ate it for dinner every single day). Also, I think the prostate cancer benefit is from a compound called lycopene.
